Sinols Reserva 2005

Sinols was a lineage of Norman origin, of the tenth century. It defines the mountains of Roses that buttress the massif of Cap de Creus, where the vines that give this wine its character.

Tasting notes: a ceremonial colour. Intense red with a marked tonality of aged roof tiles. A powerful, complex bouquet and aroma of damp undergrowth. Notes of cocoa, menthol, balsamics and nuances of roasted red peppers. Violets and vanilla, camouflaged with tones of soot, black olives and liquorice. Vigorous and well-rounded, on the palate it coincides with the first olfactory phase, with pleasant, persistent tannins. The aftertaste has notes of the spices provided by the French oak and the jamminess of the wine. Its concentration gives it good persistence.

Gastronomy: ideal with meat (roasts, casseroles, stews, platillos), and marinated meats and game dishes like jugged hare and boar. It also accompanies the entire range of cured and semi-cured cheeses.

Production: this wine is made mainly from Cabernet Sauvignon (50%), and for the rest Garnatxa and Carinyena in equal parts. The grapes, from low-yield vines (50 hl/ha), are hand-picked at the ideal moment of ripeness, and are macerated after destalking. Alcoholic fermentation lasts for 21 days at a temperature of 28 ºC, then malolactic fermentation begins. The wine then rests in new French oak casks for 12 months.
