Sinols Coromina 2005
Sinols was a lineage of Norman origin, of the tenth century. It defines the mountains of Roses that buttress the massif of Cap de Creus, where the vines that give this wine its character.
Tasting notes: surprising. Cherry colour. Very special, energetic aromas of undergrowth with mineral nuances. Balsamic notes. On the palate the wine is concentrated, intense and full of flavour, with very prolonged persistence. A long, full, strong aftertaste. Different.
Gastronomy: ideal for accompanying innovative dishes of creative and signature cuisine. It combines flavours and multiplies the taste sensations. With traditional fare, it is excellent with meats, roasts, game and also accompanies sea urchins and cured and semi-cured cheeses.
Production: Rigorous selection of grapes from the oldest vines of Carinyena and Garnatxa, the varieties proper to the Empordà. The grapes are carefully hand-picked at the optimal moment of phenolic ripeness and then destalked. 20% of the must is run off. Pre-maceration at low temperature for three days. Maceration and fermentation for 30 days at a temperature no higher than 28 ºC, with regular pumping-over and delestage. Malolactic fermentation and ripening in tank with micro-oxydation. Bottle ageing.
