Sinols Moscatell 2009
Sinols was a lineage of Norman origin, of the tenth century. It defines the mountains of Roses that buttress the massif of Cap de Creus, where the vines that give this wine its character.
Tasting notes: a classic among classics, this Moscatell is notable for its yellow colouring with subtle lemon shades. The aromas of white flowers and roses combine with delicate notes of citric fruits, honey and spices. A well-rounded, velvety flavour, silky and sweet, but never cloying. Well-structured and with a good balance between acidity and sweetness, contributing to a very long persistence that recovers the first aromas detected in the nose.
Gastronomy: the complexity of this sweet wine allows for a variety of possibilities: naturally the most traditional custom of dessert wine predominates (biscuits, pastries, dried fruits), but nowadays it is also appreciated in various formulations of the most innovative gastronomy (with foies, blue cheeses, etc.).
Production: a natural sweet wine made from Muscat of Alexandria grapes, harvested late, in mid-October. After destalking they are macerated at very low temperature to commence alcoholic fermentation. This process is halted at 15 degrees by adding a little alcohol.
