Sinols Garnatxa

Sinols was a lineage of Norman origin, of the tenth century. It defines the mountains of Roses that buttress the massif of Cap de Creus, where the vines that give this wine its character.

Tasting notes: a supreme creation, worthy of the very finest glass. Brick-red colour with tones of pine and gold. In the nose we find aromas of fresh, dried, conserved and baked fruits, quince jelly, caramel, jam and also spices like vanilla and cinnamon. In savouring it, the various aromas detected are recovered and distinguished one by one. An intense, persistent, full-flavoured, sweet and natural aftertaste.

Gastronomy: a versatile sweet wine, excellent for the end of a meal but also between meals: it combines with the most traditional desserts (dried fruits, pastries, biscuits) and newer incorporations (chocolate coulis, quince jelly, apple tatin). An ideal addition to a fresh fruit salad. And when chilled it makes a delicious aperitif.

Production: a natural sweet wine made from very ripe Lledoner Roig (Garnatxa Roja) grapes from vines over 50 years old. After destalking, they are macerated at very low temperature to allow alcoholic fermentation to commence slowly. This process is halted at 15 degrees with the addition of vinic alcohol is reached. Finally, ageing by means of the solera system in casks of different woods (acacia, cherry, chestnut and oak) gives the wine its full personality.
