Sinols Negre 2010
Sinols was a lineage of Norman origin, of the tenth century. It defines the mountains of Roses that buttress the massif of Cap de Creus, where the vines that give this wine its character.
Tasting: a dense, solid wine that testifies to the sturdiness of the vine. An intense red colour with bluish-purple tones tending to lilac. Powerful aromas of fruits and spices: blackberry, plum, coconut, vanilla, liquorices … and also a certain reminiscence of menthol and toffee. On the palate it is full and round, with pleasant tannins. A full, dense and persistent finish full of flavour.
Gastronomy: ideal for accompanying meat, casseroles, stews, blue fish, sea urchins and semi-cured cheeses.
Production: Garnatxa and Carinyena are the two main varieties used in producing this Sinols, along with a small proportion of Syrah and Merlot. The grapes are harvested throughout September, when each variety reaches phenolic ripeness. After destalking, the grapes are macerated and fermented at a temperature of 28 ºC for 15 days. At the end of this time, malolactic fermentation begins.
