Sinols Rosat 2010

Sinols was a lineage of Norman origin, of the tenth century. It defines the mountains of Roses that buttress the massif of Cap de Creus, where the vines that give this wine its character.

Tasting notes: attractive colour of a pale red sky. Subtle aroma of red fruits, particularly wild strawberries and cherries. Warm, intense flavour. Thanks to the maceration of the ripe grapes, the finish is full, dense, pleasant and persistent.

Gastrononomy: perfect for accompanying pasta, pulses, rice dishes, vegetables, hors d’oeuvres, white meats and fresh and semi-cured cheeses: but due to its marked personality it is also excellent with traditional Mediterranean dishes for which red wines are customarily reserved.

Production: a harmonious combination of the varieties Garnatxa (40%) and Carinyena (30%), with small proportions of Cabernet Sauvignon, Syrah, Merlot and Ull de Llebre, all produced separately. The harvest lasts all through the month of September, each variety being picked when it reaches phenolic ripeness. The grapes are destalked and cold-macerated for a minimum of 48 hours. Then, according to the results of the tasting, the free-run must is run off. Alcoholic fermentation has an approximate duration of 21 days at a temperature of 16 ºC.
