Sinols Criança 2007
Sinols was a lineage of Norman origin, of the tenth century. It defines the mountains of Roses that buttress the massif of Cap de Creus, where the vines that give this wine its character.
Tasting notes: the intense ruby red of autumn, of ripe cherries. Rich, complex, harmonious aromas of ageing in wood. Well-structured, opening out on the palate with long persistence. Very rich in well-integrated tannins. Powerful retronasal finish.
Gastronomy: an excellent accompaniment for meat, roasts, casseroles, stews, and for cured and semi-cured cheeses. It is also an invitation to discover interesting new combinations of the great variety of dishes of the traditional cuisine of the Empordà, such as our popular
“sea and mountain” specialities.
Production: the wine is made from 30% Garnatxa, 30% Carinyena and 40% Cabernet Sauvignon, completely separated from the stalk and devatted by 20%. Hand-picked grapes at phenolic ripeness. Pre-maceration at low temperature for three days. 21 days’ alcoholic
fermentation at a temperature below 28ºC, followed by malolactic fermentation and nine months’ resting in casks of American and French oak. Coupage of the best casks.
